Scallop and mushroom kebabs is as easy and quick dish to produce.  The flavours of the scallops are au naturel and are not spoilt.  It makes and excellent starter or tapas dish.

Preparation Time: 10 Mins

Cooking Time: 4 Mins

Total Time: 24 Mins

Ingredients

For 2 servings…

1 tbs               Honey  - runny        

½                   Lemon  - juice of      

½ tbs             Vinegar  - raspberry  

                     Pepper      

                     Salt          

4                    Scallops  - with corals

4                    Mushrooms

Method

Heat a grill.

Mix the honey, lemon juice and vinegar together in a bowl and season with pepper and salt.

Detach the corals from scallops.  Cut the earthy foot from the mushrooms.  Put scallops, corals and mushrooms in the bowl and let them marinate for 10 minutes, turning over occasionally.

Thread 2 scallops, 2 corals and 2 mushrooms on to each of two skewers – alternating between them.

Place the kebabs under the grill and cook for 2 minutes before turning them over and cooking the other sides for 2 minutes.  Paint them with the marinate and serve.

An aromatic white wine.
