Scallops with orange juice and lettuce hearts is a light tangy dish that makes an excellent starter.

Preparation Time: 10 Mins

Cooking Time: 5 Mins

Total Time: 15 Mins

Ingredients

For 2 servings…

1 tbs               Olive oil    

4                    Scallops    

  Salt              

¼                   Orange  - juice of      

100 gms           Lettuce  - hearts       

1                    Tomato  - chopped   

  Pepper          

For the dressing

15 ml              Olive oil    

½ tbs               Vinegar  - white wine 

¼                   Orange  - juice of      

                     Pepper      

Method

Heat 1 tbs of the oil in a frying pan.  Add the scallops and cook for 2 minutes on each side. Salt slightly, pour on the orange juice and cook until the juice has evaporated.  Turn over the scallops delicately and take off the fire.

Put the lettuce hearts and tomatoes in a salad bowl.  In a bowl, whip the vinegar with a pinch of salt, the remainder of the oil and orange juice and a small amount of pepper.  Pour this sauce on to the salad, mix and cover with the scallops.  Pepper and serve at once.
