Cooking the scallops in parcels intensifies the flavours. It is delicious with the vegetables and mushrooms. It makes and excellent starter and the parcels can be prepared in advance – leaving just the cooking for the last moment. Preparation Time: 15 Mins Cooking Time: 20 Mins Total Time: 35 Mins Ingredients For 2 servings… 1 tsp Herbes de Provence 1 Shallot - chopped ½ glass Wine - dry white 1 Carrot - diced 1 Leek - chopped finely 2 tsb Stock - fish 100 gms Mushrooms 4 Scallops Salt Pepper Method Preheat an oven to 250°C. Cut 2 sheets of aluminium foil 30 cm by 30 cm. Place the vegetables, mushrooms and scallops on the centre of each piece of foil. Pour on the wine and stock and powder with salt, pepper and herbes de Provence. Fold the sheets of foil to make closed parcels and cook them in the oven for 20 minutes. Wine recommendations Should be a white wine but the flavour will stand up to a strongly flavoured wine.
