These scallops have a fine Chinese flavour.  They make a fantastic starter with the additional advantage that they are easy to prepare.

Preparation Time: 10 Mins

Cooking Time: 5 Mins

Total Time: 15 Mins

Ingredients

For 2 servings…

4                    Scallops    

                     Salt          

                     Wine  - dry white     

2                    Spring onions  - shredded finely

2½ cm             Ginger  - peeled and shredded finely       

1 knob             Butter       

1 dash             Soy sauce  - light      

Method

Gently steam the scallops, seasoned with salt, over white wine for four minutes.

Stir-fry the spring onion and ginger with a little butter and soy sauce for one minute.  Spoon a little of this mixture on to each scallop.

Serve.
