Bacon goes extremely well with scallops.  This dish exploits that synergy and if absolutely delicious.  It makes a wonderful starter ot tapas dish.

Ingredients

For 2 servings…

4                    Scallops  - cut into large dice   

                     Pepper      

                     Flour        

                     Butter       

1                    Shallot  - chopped finely         

60 gms            Bacon  - streaky, chopped       

1 small glass     Wine  - dry white     

                     Parsley  - chopped    

Method

Season the scallops with pepper and sprinkle them with flour.

Melt half the butter in a frying-pan and add the shallot and bacon.   When the shallots have turned pale yellow and the bacon is beginning to frizzle, add the scallops to the pan.  Let them cook very gently for 5 minutes.  Take them out of the pan and put them in the serving dish.

Pour the wine into the pan and let it bubble fiercely- stirring so that it amalgamates with the juices and all the bits left behind in the pan.  When it has thickened to a syrupy consistency, add a very little parsley and pour it over the scallops.  Serve.
