Blackberry and lemon ice cream has all the tastes of late summer and is outstanding on a warm Indian summer’s day. It is simple to make and does not require re-beating to get a smooth texture.

Ingredients For 6 portions 230 gms Blackberries 30 cl Cream - double 1 Lemon - juice of 170 gms Sugar 110 ml Water
Method Put the sugar and water into a saucepan and heat gently until the sugar has dissolved, stirring occasionally. Add the blackberries and cook until thick and pulpy. Take off the heat and leave to cool. Add the lemon juice to the blackberries. Whisk the cream until just thick and fold into the blackberries lightly. Pour into a container, cover with a lid and freeze until firm.
