This delicious ice cream has a true flavour of raspberries and cream.  The raspberries are uncooked.

Preparation Time: 15 Mins

Cooking Time: 20 Mins

Total Time: 1½ Hrs

Ingredients

For 10 servings…

340 gms           Raspberries

10 cl               Cream  - double       

For the custard

3                    Egg yolks   

80 gms            Sugar  - caster        

30 cl               Cream  - single        

Method

To make the custard…

Beat together the egg yolks and sugar.  Pour on the milk and, in a bain marie, gently heat this – whisking all the time – until thickened.  This will take 20 minutes

To make the ice cream…

Purée the raspberries in a food processor.  Stir the resulting purée into the custard.

Whip the double cream until slightly thickened.  Mix this into the raspberry and custard mixture.

Freeze in an ice cream maker.

15 minutes before serving, take the ice cream out of the freezer   This will allow it to soften up a little.
