This gooseberry ice cream is the simplest form of ice cream – basically gooseberries and cream.  It is like a frozen gooseberry fool.

Preparation Time: 30 Mins

Cooking Time: 10 Mins

Total Time: 1 Hr

Ingredients

For 6 servings…

340 gms          Gooseberries           

3                    Egg whites

170 gms          Sugar  - caster        

210 ml             Cream       

Method

Gently cook the gooseberries in a covered pan with just enough water to cover the bottom of the pan.  Once they start to cook, they will make their own liquid.

When the berries are soft, puree them and leave them to cool.

Beat the egg whites so they hold their own shape and then gradually beat in the sugar.

Fold the gooseberry puree into the egg whites.

Whip half a pint of double cream and fold it into the egg white mixture and freeze in an ice cream maker.
