Each Middle Eastern country and area has its own favourite flavourings for Kofta. This version has a mix of spices that very much covers the Middle Eastern region. Together they make a delicious combination. They can, however, be varied to produce more specific variations. Small versions can be served as canapés - perhaps with a dip. Preparation Time: 15 Mins Cooking Time: 10 Mins Total Time: 25 Mins Ingredients For 4 servings… 450 gms Mince - beef 1 Onion - minced Pepper - freshly ground, black Salt ½ tsp Cinnamon - ground ½ tsp Allspice - ground ½ tsp Cumin - ground ½ tsp Coriander - ground Olive oil Method Put all the ingredients into a food processor and blend until a smooth paste is achieved. Take smallish lumps of the mixture and mould them into sausage shapes around. Very lightly wet them with olive oil. Cook them on a prepared barbecue or under a hot grill for 10 minutes, turning them occasionally Serve the kofta with warm Arab or pitta bread, or with plain rice, and accompanied by salad.
