Each Middle Eastern country and area has its own favourite flavourings for Kofta.  This version has a mix of spices that very much covers the Middle Eastern region.  Together they make a delicious combination.  They can, however, be varied to produce more specific variations.

Small versions can be served as canapés - perhaps with a dip.

Preparation Time: 15 Mins

Cooking Time: 10 Mins

Total Time: 25 Mins

Ingredients

For 4 servings…

450 gms           Mince  - beef          

1                    Onion  - minced       

                     Pepper  - freshly ground, black  

                     Salt          

½ tsp              Cinnamon  - ground  

½ tsp              Allspice  - ground     

½ tsp              Cumin  - ground       

½ tsp              Coriander  - ground   

                     Olive oil     

Method

Put all the ingredients into a food processor and blend until a smooth paste is achieved.

Take smallish lumps of the mixture and mould them into sausage shapes around.  Very lightly wet them with olive oil.

Cook them on a prepared barbecue or under a hot grill for 10 minutes, turning them occasionally

Serve the kofta with warm Arab or pitta bread, or with plain rice, and accompanied by salad.

Variations

The spices can be varied depending on personal preferences.
