There are various was of cooking silverside but the key is to cook the joint until it is tender but without letting it dry out.  Generally braising or even boiling is used.  In this recipe the joint is roasted, but covered in tin foil and based with water to keep it moist. 

Preparation Time: 15 Mins

Cooking Time: 1¾ Hrs

Total Time: 2 Hrs

Ingredients

For 6 servings…

100 ml             Water       

1 joint             Silverside  - boned and rolled   

1 tbs               Dripping  - beef       

                      Pepper  - black        

                      Salt          

10                  Onions  - red - small 

4 heads           Garlic  - halved        

4 sprigs           Thyme      

Method

Preheat an oven to 220°C.

Rub the rolled silverside joint with the beef dripping and sprinkle with plenty of salt and pepper.  Put the joint in a roasting tin into the oven for 15 minutes to brown.

Reduce the oven temperature to 180°C.  Add the onions, garlic and thyme around the beef with about 100ml of water.  Cover with foil and cook for about 1½ hours, basting from time to time and adding a little more water if necessary.  This will keep the meat moist.

Uncover the meat for the last 15 minutes of cooking.

Remove the meat to a warm serving dish to rest with the onions and garlic.

Slice the beef and serve a couple of slices per person with the onions and a piece of garlic.
