Tournedos Mirabeau is a grilled tournedos presented with anchovies, olives and tarragon and served with anchovy butter.

Preparation Time: 15 Mins

Cooking Time: 6 Mins

Total Time: 20 Mins

Ingredients

For 2 servings…

80 gms            Anchovy butter        

4                    Steaks  - tournedos   

4                    Olives  - large, pitted 

  Tarragon  - leaves - blanched           

8                    Anchovy fillets         

For the anchovy butter

80 gms            Butter        

18                  Anchovy fillets         

                     Pepper       

                     Salt          

½ tbs             Lemon juice

Method

For the anchovy butter…

Soften the butter.

Purée the anchovy fillets with a mortar and pestle, season and add a dash of lemon juice.  Work into the softened butter.  Cool a little but leave soft.

For the tournedos…

Frill the tournedos for 2 minutes on each side.

Lay two anchovy fillets in a cross on each tournedos and top with an olive.  Surround them with tarragon leaves.  Serve with the anchovy butter separate.
