This recipe is one of many variations of kofta from Morocco.  It has a good balance of flavours with a discreet spicey kick.

Preparation Time: 15 Mins

Cooking Time: 10 Mins

Total Time: 25 Mins

Ingredients

For 2 servings…

450 gms           Mince  - beef or lamb 

1                    Onion  - grated        

2 tbs               Parsley  - chopped    

¼ tps              Marjoram  - chopped 

¼ tsp              Cumin  - ground       

¼ tsp              Coriander  - ground   

¼ tsp              Ras el hanout          

¼ tsp              Cayenne    

                     Pepper      

                     Salt          

Method

Blend the mince with the onions, herbs and seasonings until very smooth and pasty.  Shape small lumps of the mixture around skewers.

Cook on a barbecue or under a grill for 10 minutes, turning once.

Serve with pitta bread, salad and minted yoghurt or chilli sauce.
