Pork chop grilled with herb, is particularly enjoyable presented on a simple lettuce salad.  The cooking juices from the chops with their hints of lemon act as a fine dressing for the salad.

Preparation Time: 10 Mins

Cooking Time: 15 Mins

Total Time: 2½ Hrs

Ingredients

For 4 servings…

½ tbs             Marjoram  - chopped 

½ tbs             Thyme  - chopped    

½ tbs             Fennel  - chopped    

½ tbs             Parsley  - chopped    

2 cloves           Garlic  - chopped     

4                    Pork  - chops          

                      Pepper  - black, freshly ground 

                      Salt          

1 tbs               Olive oil    

1 tbs               Lemon juice            

To serve

                      Lettuce     

Method

Strew the herbs and garlic, over the pork chops.  Season them and pour over them the olive oil and lemon juice.  Leave them to marinate in this mixture for an hour or two.

Grill the chops and serve with a green salad upon which, instead of dressing, you pour the juices and herbs which have fallen from the meat into the grilling pan.
