These kebabs are cooked in a teriyaki style; that is, the meat is marinated in a teriyaki sauce and then grilled or broiled, creating a shiny, flavourful glaze. The sauce caramelizes during the cooking process, giving the dish a sweet and savoury flavour. They can be grilled or barbequed. Preparation Time: 20 Mins Cooking Time: 15 Mins Total Time: 3½ Hrs Ingredients For 6 servings… 450 gms Belly pork - cut into cubes 12 Mushrooms - button 1 Onion - red - cut into 12 12 Tomatoes - small For the marinade 3 tbs Olive oil 3 tbs Soy sauce 1 clove Garlic - crushed 1 Chilli - red, hot, dried - chopped Pepper Salt For the sauce 30 cl Stock - chicken or beef 2 tbs Cornflour 2 cloves Garlic - crushed 1 tbs Sugar - muscovado ¼ tsp Ginger - dried Method To marinate the kebabs… Whip together the marinate ingredients. Add the pork and vegetables and turn to coat evenly. Cover the dish and leave for 3 hours. To make the sauce… Combine the sauce ingredients in a saucepan and bring the mixture to a boil - stirring constantly. Reduce the heat and simmer gently for 5 minutes. Set aside. To prepare and cook the kebabs… Heat a barbeque or grill. Remove pork from marinade shaking off the excess. Thread pork onto the skewers, alternating with mushrooms, onion and tomatoes. Cook the kebabs on the barbeque or grill for 15 minutes - turning them once. Serve with the sauce. Variations The vegetables on the kebabs can be changed to suit tastes.
