This recipe produces kebabs that have a distinct Greek flavour.

It includes vegetables (mushrooms, onions and courgettes).  These can be varied or even omitted.

Preparation Time: 15 Mins

Cooking Time: 10 Mins

Total Time: 1 h5r

Ingredients

For 4 servings…

450 gms           Belly pork  - cut into 2 cm cubes

8                    Mushrooms  - button 

2                    Onion  - quartered    

1                    Courgette  - cut into 8 pieces   

For the marinade

1 tbs               Olive oil     

1 clove             Garlic  - crushed       

2 tsp               Oregano    

1 tsp               Rosemary  - chopped 

140 ml             Lemon juice            

                     Pepper  - freshly ground, black  

                     Salt          

Method

For the marinade…

Combine all the marinade ingredients in a bowl.

For the kebabs…

Place pork cubes and vegetables in the marinade and leave in a fridge for 30 minutes.

Thread four kebab skewers alternating between the pork cubes and vegetables.

Place the kebabs on a barbeque or under a grill 10 minutes, turning them once.

Variations

The vegetables can be varied or omitted.

Other pork meat can replace the belly pork.
