This ragoût is extremely simple to make and is absolutely delicious.  It can be cooked well in

advance, cooled, kept for two or three days and then reheated before serving.

 

Preparation Time             10  Mins

Cooking Time                1.5  Hrs

Elapsed Time               1.75  Hrs

 

Ingredients

For     6  portions

2 cloves           Garlic  - chopped finely

910 gms           Leeks  - sliced

3 tbs               Olive oil

1 tbs               Parsley  - chopped

                      Pepper

910 gms           Pork  - cut into 6 steaks

                      Salt

450 gms           Tomatoes  - chopped

230 ml             Wine  - white

 

Method

Preheat the oven to 180°C .

Sprinkle the pork steaks with salt and pepper.  Heat the oil in a flameproof casserole with the

garlic.  Add the steaks and brown them, allowing 4-5 minutes on each side.  Add the wine and

tomatoes, cover and simmer for 15 minutes.

Take the pork steaks from the casserole; add the leeks with salt and pepper and mix.  Cover

the casserole and cook gently for 5 minutes.

Place the pork back on top of the leeks, cover and cook in the oven for 50 minutes until the

pork is very tender.  Sprinkle with the parsley just before serving.
