These are simple but delicious kebabs.  The red onions are what make it.

Preparation Time: 10 Mins

Cooking Time: 10 Mins

Total Time: 8 Hrs

Ingredients

For 2 servings…

2 slices            Belly pork  - cut into 2 cm cubes

1                    Red onion  - quartered

For the marinade

1 clove             Garlic  - crushed       

½ tsp              Italian seasoning      

                     Pepper  - freshly ground, black  

½ tsp              Salt          

To drizzle

                     Olive oil     

To garnish

                     Parsley  - chopped    

Method

To marinate the meat…

Combine the marinade ingredients.  Add the pork and onions.  Leave in a fridge overnight.

To make the kebabs…

On to metal skewers thread the meat and onion - alternating between the two.  Do not crowd too much.  Leave at room temperature for 30 minutes.

Heat a grill to a medium-high heat or prepare a barbeque.  Grill for 10 minutes in total – turning once.

Let the kebabs rest for 3 minutes before serving.

Variations

The recipe specifies using belly pork and the fat in the belly makes the kebabs succulent.  If the fat is not liked, tenderloin can be used.
