These simple kebabs, are typical of those served in Greece.  They can be cooked under a grill, on a barbecue or even in a griddle pan.

Preparation Time: 15 Mins

Cooking Time: 10 Mins

Total Time: 1 Hr

Ingredients

For 4 servings…

400 gms           Belly pork  - cut into 2 cm cubes

For the marinade

50 ml              Olive oil     

¼                   Lemon  - juice of      

½ tbs              Vinegar  - white wine 

½ tsp              Honey  - runny        

½ tbs              Oregano    

  Pepper  - freshly ground, black         

  Salt              

For the tzatziki

1                    Cucumber  - small    

  Salt              

60 cl               Yoghurt  - Greek      

1 tbs               Olive oil     

1 tbs               Vinegar  - wine        

2 cloves           Garlic  - crushed       

  Pepper           

To serve

4                    Pitta breads

1                    Onion  - red - sliced  

1                    Tomato  - sliced       

Method

To marinate the pork…

Place the pieces of pork in a bowl, along with all the marinade ingredients.  Mix well and put in a fridge for 20 minutes.

To make the tzatziki…

Peel and grate the cucumber.  Put into a colander and sprinkle on to it some salt.  Leave for 15 minutes to drain and pat dry with kitchen paper.

Beat the yoghurt, add the remaining ingredients and then chill.

To make the kebabs…

Thread the pieces of pork on to the skewers – but without compacting them too much.

Heat a grill to a high heat.

Cook the pork skewers for about 10 minutes, turning occasionally, until nicely coloured and cooked through.

Serve with typical Greek accompaniments.
