This French chicken dish punches well above its weight.  Has an outstanding flavour.

Preparation Time: 10 Mins

Cooking Time: 15 Mins

Total Time: 1 Hr

Ingredients

For 4 servings…

1                    Chicken  - cut into 6 pieces      

                     Salt  - fine  

For the marinade

2 tbs               Olive oil    

1 tbs               Lemon juice            

1 clove             Garlic  - chopped     

1 tbs               Parsley  - chopped    

½ tsp              Ginger  - ground      

1 pinch            Cayenne    

                     Pepper      

                      Salt          

For deep-frying

                     Oil           

Method

Mix together the marinade ingredients.  Marinate the chicken pieces in this mixture for 30 minutes.

Drain them, coat them in breadcrumbs and then deep-fry them in very hot oil (180°C).  After 15 minutes (when they are golden), drain them on paper towels and sprinkle them with fine salt and serve.

Serve With

          Lemon wedges
