This simple recipe transforms the dullest of chickens and turns it into a delicious dish.  The recipe suggests grilling the kebabs but they are even better if barbequed.  The recipe can also be used for whole chicken thighs or drum sticks – but increase the cooking time.

Preparation Time: 15 Mins

Cooking Time: 6 Mins

Total Time: 4¼ Hrs

Ingredients

For 6 portions

6 breasts          Chicken     

6 cloves           Garlic       

                Lemons  - juice of     

10 cl               Olive oil    

                      Parsley  - chopped    

                      Salt          

Method

Cut the breasts into bite-sized cubes and put in a dish.

Crush the garlic with salt until quite pulpy.  Stir in the lemon juice and, then whisk into the oil.  Pour over the chicken, turning everything over, and leave, covered, for 4 hours, turning the pieces once or twice during that time.

Put a large amount of chopped parsley on a plate. Thread the chicken onto small skewers.  Roll each skewer in parsley and then cook under a hot grill for about 6 minutes - turning them and basting with the marinade.  They should end up golden on all sides.
