Chicken with ginger is an ideal barbeque dish but can be cooked on a griddle or under a grill (the cooking times may have to be increased to ensure the chicken is cooked through. The ginger flavour gives the dish a slightly oriental flavour but not overtly so (add soy sauce to the basting mixture to give a more oriental flavour). Whilst lovely hot, the chicken can also be eaten cold and is perfect for a picnic. Preparation Time: 10 Mins Cooking Time: 10 Mins Total Time: 20 Mins Ingredients For 6 servings… 6 Chicken legs For basting 1 tsp Honey 2 tbs Olive oil 2 tbs Sherry - dry 2 cloves Garlic - chopped 1 Chilli - red, hot, dried - chopped 1 tbs Ginger - fresh - grated Method To prepare the basting mixture… Beat all the ingredients together so they are combined. To cook the chicken… Paint the flesh sides of the chicken portions with the basting mixture. Place on griddle or barbeque, flesh side down, and cook for 5 minutes. While the flesh sides are cooking, brush the tops with the basting mixture. Turn over the joints and cook the other side until the skin is crispy and caramelised.
