This recipe originated in Greece and combined chicken, peppers and onion.  It suggests the kebabs with lemon mayonnaise and pickled onion and cabbage.  As an alternative, it is excellent with tzatziki or even a green salad.

Preparation Time: 20 Mins

Cooking Time: 10 Mins

Total Time: 1½ Hrs

Ingredients

For 4 servings…

8                    Chicken thighs  - boned and each cut into three chunks        

1                    Pepper  - red - cut into 8         

1                    Pepper  - yellow  cut into 8      

1                    Onion  - red - cut into 8          

                      Pepper      

                      Salt          

For the marinade

2 tbs               Olive oil    

2 tbs               Lemon juice            

1 tsp               Rosemary  - fresh - chopped    

1 tsp               Thyme  - fresh - chopped       

1 tsp               Paprika     

                      Pepper  - freshly ground, black 

                      Salt          

To serve

300 gms          Lemon mayonnaise   

2 tsp               Ladolemono            

75 gms            Pickled onion and caggage garnish         

Method

Mix together the ingredients for the marinade.   Add the chicken chunks, coating them well, and then marinate them for at least 1 hour - ideally overnight.

When ready to cook, thread the chicken, peppers and onion alternately onto the skewers.  Season with salt and pepper.

Cook under a medium-hot grill or in a griddle pan for 10 minutes, turning every couple of minutes and basting with the marinade.

Arrange the kebabs on individual plates.  Serve with a small pot of lemon mayonnaise, a drizzling of ladolemono and a spoonful of onion and cabbage garnish.
