The yoghurt, orange and cardamom seeds give this dish a distinct Middle Eastern feel. It is surprising how well the flavours go together. Preparation Time: 15 Mins Cooking Time: 10 Mins Total Time: 9 Hrs Ingredients For 4 servings… 230 ml Yoghurt 2 Oranges - grated rind and flesh cut into half slices 3 tbs Vinegar - Sherry 2 tsp Cardamon seeds Pepper - freshly ground, black 4 Chicken thighs - boned and each cut into three chunks Salt To serve Rice - brown Salad - green Method Mix together the yoghurt, orange rind, vinegar and cardamom seeds and add black pepper to taste. Add the chicken chunks, stirring well to cover. Leave to marinate overnight, turning as occasionally. Arrange the chicken on skewers with orange segments in between. Grill under a hot grill for about 5 minutes on each side or until just cooked. Lightly season with salt. Serve on a bed of brown rice with any remaining marinade poured over and a green salad to accompany. Wine recommendations A robust red or a powerful white.
