This an Italian chicken and peppers dish where chicken pieces are browned and slowly cooked with peppers, onions, garlic, tomatoes and aromatic herbs.  The result is tender, juicy chicken infused with the sweet and slightly smoky flavour of the peppers.  It is full of Mediterranean flavours.

It makes an excellent lunch, supper or dinner main course.

Preparation Time: 15 Mins

Cooking Time: 1¼ Hrs

Total Time: 2 Hrs

Ingredients

For 6 servings…

1                    Chicken  - cut into 6 pieces      

                     Olive oil     

2                    Onions  - sliced        

3 cloves           Garlic  - chopped      

                     Pepper      

                     Salt          

                     Marjoram   

                     Thyme      

4                    Peppers  - red or green          

230 gms           Tomatoes  - chopped roughly   

1 pinch            Basil         

6 slices            Orange  - peeled      

Method

Brown the chicken pieces in a braising pan in olive oil with the onions, garlic, salt, pepper, marjoram, and thyme.  Cover the pan and cook slowly for about 1 hour - taking care that the chicken does not burn.

In the meantime, put the peppers into the oven or under the grill until they are soft and the outer skin can be peeled off; remove the seeds, cut them in strips.  When the chicken has cooked for the hour and the pepper strips to the braising pan with the tomatoes and the basil.

When the tomatoes are cooked the dish is cooked but, at the last moment, add a few peeled slices of orange.

A red or white wine.  Can be a refined, elegant wine or a rustic wine.
