Crunchy sesame chicken with spicy cucumbers |

This recipe represents an exquisite way of cooking chicken breasts. They come out quite succulent and taste delicious. The cucumber “relish” is an excellent accompaniment. Preparation Time: 10 Mins Cooking Time: 8 Mins Total Time: 20 Mins Ingredients For 2 servings… For the chicken 2 breasts Chicken 60 gms Flour 1 tsp Paprika - smoked 1 tsp Salt 2 Eggs - beaten 60 gms Breadcrumbs - dried 1 tbs Sesame seeds For frying 2 tbs Olive oil For the cucumber 1 tbs Sesame oil 1 tsp Honey - runny 1 Lime - juice of 1 tsp Chilli sauce ¼ tsp Salt ½ Cucumber - cut into wedges Method Put a chicken breast between two pieces of cling film or greaseproof and beat it until it is about 2½ cms thick. Repeat with the second chicken breast. Take two large plates and a wide bowl. On one plate mix the flour with the paprika and salt. Put the beaten eggs in the bowl. On the final plate mix the crumbs and sesame seeds. Cover the chicken breasts in flour, then egg and then the crumbs mixture. Press the crumbs firmly on to the chicken. Put a large frying pan on a medium heat with plenty of oil. Fry the chicken breasts for about four minutes on each side. Do not move them around in the pan - just leave to go golden and crisp up. When the chicken is cooked, transfer it to a plate and sprinkle with flaky salt. While the chicken is cooking, make the spicy cucumber. Put the dressing ingredients in a bowl and whisk. Add the cucumber and toss it in the liquid. Serve the hot chicken with the cold, spicy cucumber. Wine recommendations A white or red wine.
