To achieve a real authentic and typical Spanish taste, incorporate into the dish olive oil, ripe tomatoes, onions, garlic, olives and almonds.  This easy Spanish chicken dish tastes of the sun and Spain.

Ingredients

For 4 portions

60 gms            Almonds  - flaked     

1                    Chicken  - jointed     

2 cloves           Garlic  - chopped     

3 tbs               Olive oil    

20                  Olives       

1                    Onion  - chopped     

110 gms          Parma ham  - cut into strips    

                      Pepper  - freshly ground, black 

2                    Peppers  - sweet red - sliced    

                      Salt          

2 tbs               Tomato purée  - mixed with half pint of water       

450 gms          Tomatoes  

Method

Heat the olive oil in a pan and in it fry the garlic until golden.  Add the onion, almonds, chicken pieces and ham.  Turn until the onions are translucent and the chicken brown.  Stir in the pepper and the tomatoes and tomato purée mixture.   Simmer over a low heat, covered, for about 40 minutes.  Season to taste.  Stir in the olives and serve.
