Chicken gyros is a Greek dish traditional cooked on a vertical rotisserie and served with pitta bread and salad vegetables with the marinade being critical.  As most people do not have a vertical rotisserie, in this version the chicken is fried.  The result is an authentic Greek flavour.

It is usually served as a meze dish.

Preparation Time: 15 Mins

Ingredients

For 6 portions

900 gms          Chicken thighs  - boned, skin on

2 tbs               Olive oil    

For the marinade

2 tsp               Cinnamon  - ground  

100 gms          Cumin  - ground      

3 tbs               Garlic  - purée         

5 tbs               Lemon juice            

5 tbs               Olive oil    

3 tbs               Paprika     

2 tbs               Parsley  - chopped    

50 gms            Salt          

To serve

1                    Onion  - red - thinly sliced       

1 tsp               Paprika     

6                    Pitta bread

1                    Tomato  - halved and sliced     

Method

Mix together the marinade ingredients in a large bowl.   Add the chicken, rubbing in the marinade, and leave for 30 minutes.

Take the chicken from the marinade and wipe dry with absorbent kitchen towel.  Fry the chicken in a very hot, large pan for 6 minutes on each side, without stirring.  It should be crispy and nicely coloured.

To serve, slice the chicken into 1cm pieces and, on individual plates, pile onto warm pitta bread, top with the onion, tomato and sprinkle with paprika.
