Honeyed chicken has a lovely Eastern flavour.  The honey produces a crispy dark outside and the Oriental flavour permeates right through the flesh.  It is best served with rice.

Preparation Time: 10 Mins

Cooking Time: 1¼ Hrs

Total Time: 95 Mins

Ingredients

For 6 servings…

1                    Chicken     

For the cooking sauce

4                    Spring onions  - chopped        

1 tbs               Ginger  - freshly grated          

1 tbs               Soy sauce  

1 tbs               Honey      

1                    Lemon  - juice of      

1 tbs               Brandy      

Method

Mix the non-chicken ingredients together.

Place the chicken in a roasting dish breast side uppermost.  Pour half the sauce over the breast.  Turn over the chicken and pour the other half of the sauce over the back.

Cook in a medium oven (180°C) for about 45 minutes breast down.  Turn over the chicken and cook for a further 30 minutes with the breast up.  Baste with the sauce and juices regularly during cooking.  After 1¼ hours in total the chicken should be tender and cooked through.

Carve and serve.

Variations

If spring onions are not available, use shallots.
