This recipe comes from Greece and is full of flavours from the sweet, fruity and spicy marinade.

Preparation Time: 20 Mins

Cooking Time: 1½ Hrs

Total Time: 2 Hrs

Ingredients

For 4 portions

800 gms          Belly pork  - skinned and boned

1                    Onion  - red - thinly sliced       

1 tbs               Paprika     

For the marinade

1 tsp               Cinnamon  

2 tsp               Fennel seeds           

3 cloves           Garlic  - crushed      

2 tsp               Honey  - runny        

2 tsp               Marjoram  - dried     

3 tsp               Mustard  - Dijon      

100 ml             Orange juice  - fresh 

2 tsp               Paprika     

2 tbs               Parsley  - chopped    

1 tbs               Salt          

Method

Blend the marinade ingredients to a smooth paste. 

Rub the marinade onto both sides of the pork belly, roll the meat up and tie with string.

Roast the meat in a preheated oven at 180°C for 1½  hours or until tender.

To serve…

Carve the meat into 2.5 cm slices and pile onto individual plates.  Top with the onion and a sprinkling of

paprika.
