Pepper and pork kebabs are a lovely barbeque or grill dish with eastern and western flavours. 

The lime juice in the marinade gives and lovely enticing flavour.

Ingredients

For     6  portions

12                  Bay leaves

110 gms           Mushrooms  - button

1                    Onion  - quartered

1                    Pepper  - green - cut into 2½ cm squares

1                    Pepper  - red - cut into 2½ cm squares

450 gms           Pork  - fillet

230 gms           Tomatoes  - quartered

For the marinade

1 tbs               Coriander  - fresh - chopped

1                    Lime  - juice of

170 ml             Olive oil

3 tbs               Sherry  - dry

1 tbs               Soy sauce  - light

2 tsp               Sugar  - brown

 

Method

Mix the marinade ingredients together.

Soak the other ingredients in the marinade for 2 hours, turning over occasionally.  Then thread

them on to skewers and cook them on a barbecue or under a grill until the pork is cooked.
