“a marinheira” means in Portuguese “in the style of a mariner”. This is a pork dish that has shellfish added giving it a maritime flavour. The shellfish go extremely well with the pork. Preparation Time 15 Mins Cooking Time 20 Mins Elapsed Time 24 Hrs Ingredients For 4 portions 60 cl Cockles Pepper 450 gms Pork - lean For cooking the cockles 2 cloves Garlic - chopped finely 1 Onion - chopped finely 1 tbs Parsley - chopped Pepper Salt 2 Tomatoes - chopped For frying the meat 2 tbs Olive oil For the marinade 1 Bay leaf 2 cloves Garlic - crushed 2 tbs Paprika 6 Peppercorns Salt 1 glass Wine - white To serve 1 Lemon - juice of Method To prepare the meat… Cut the pork into 2½ cm cubes and marinate them in the wine with the spices and seasoning for 24 hours.
