“a marinheira” means in Portuguese “in the style of a mariner”.  This is a pork dish that has shellfish added giving it a maritime flavour.  The shellfish go extremely well with the pork.

Ingredients

For     4  portions

60 cl               Cockles

                      Pepper

450 gms          Pork  - lean

For cooking the cockles

2 cloves           Garlic  - chopped finely

1                    Onion  - chopped finely

1 tbs               Parsley  - chopped

                      Pepper

                      Salt

2                    Tomatoes  - chopped

For frying the meat

2 tbs               Olive oil

For the marinade

1                    Bay leaf

2 cloves           Garlic  - crushed

2 tbs               Paprika

6                    Peppercorns

                      Salt

1 glass            Wine  - white

To serve

1                    Lemon  - juice of

Method

To prepare the meat…

Cut the pork into 2½ cm cubes and marinate them in the wine with the spices and seasoning for 24 hours.

To prepare the cockles…

Gently brown the onion and garlic in olive oil.  Add the tomatoes and cook till they amalgamate with the onion and garlic as a thick sauce.  If necessary, thicken with a little flour.  Season.  Add the cockles and heat them - but do not boil them.  Add the parsley.

To cook the meat…

While the cockles are heating, take the pieces of meat out of the marinade and fry them until golden brown in olive oil.  Serve the pork and the cockles side by side in a dish and squeeze over them lemon juice.
