Wild garlic is a natural herb that grows in woods and near streams in the spring.  It is widespread and easy to identify (by its garlic aroma) and to forage.

Wild garlic aļoli is more subtle and less pungent than normal garlic-based aļoli.  It is basically mayonnaise flavoured with wild garlic.  It can be served with fish, meat, vegetables, salads or, like rouille, in soup.  It can also be used as a dip.

Ingredients

1 bunch           Wild garlic  - chopped

200 ml             Olive oil    

1                    Egg yolk    

1 tsp               Mustard  - Dijon      

                      Salt          

                      Pepper  - white        

½                   Lemon  - juice of      

Method

Blend the wild garlic with the oil coarsely.

Whisk the egg yolk, mustard and salt.  Then, while continuing to whisk, gradually trickle in the oil and wild garlic mixture to produce a thick mayonnaise consistency.  Season with pepper and lemon juice.
