This version of apricot sauce is made using fresh apricots.  It has a full, powerful apricot flavour that brings thoughts of the Mediterranean.  It is an excellent accompaniment for a variety of desserts, including rice pudding and flans.

Ingredients

For 2 servings…

4                    Apricots  - fresh, stoned         

˝                   Lemon  - juice of      

1 tbs               Almonds  - ground    

30 gms            Sugar       

1 tsp               Kirsch       

Method

Blend together all the ingredients until smooth.

Variations

The kirsch can be replaced with white wine or Sherry.

Instead of fresh apricots, dried apricots can be used.
