The name “Devil butter” might imply a hot spicy butter.  If fact, the spiciness is very modest; just enough to add some interest.  It goes extremely well with salmon or trout.

Preparation Time: 15 Mins

Cooking Time: 7 Mins

Total Time: 1 Hr

Ingredients

For 2 servings…

30 gms            Butter       

˝ tsp             Mustard  - Dijon      

˝ tbs             Lemon juice            

1 pinch            Cayenne    

2 tsp               Parsley  - chopped    

Method

Combine the butter ingredients to form an emulsified mixture.  Wrap it in cling film in a sausage shape.  Put it in a fridge to harden.

To use, cut off slices of the butter and put on top of the fish being served.
