This is a brilliant sauce with a strong flavour of butter but augmented by the mushrooms and herbs.  It is excellent with fish – particularly, red mullet, monkfish, salmon and trout and, particularly, when grilled or fried.

Preparation Time: 10 Mins

Cooking Time: 20 Mins

Total Time: 30 Mins

Ingredients

For 4 servings…

60 gms            Butter       

1˝ tbs             Flour        

1 tbs               Olive oil    

3                    Shallots  - chopped   

1 tbs               Herbes fines            

80 gms            Mushrooms  - sliced  

                     Pepper      

                     Salt          

Method

Make a blond roux with most of the butter and the flour.  Add some oil, the shallots, fines herbes, mushrooms, the wine and seasoning.  Cook for 15 minutes, then strain and, over a low heat, add the remaining butter.  Serve hot.
