Chilli jam is a sweet relish made from chillies and is excellent with cold meats and cheeses. How hot it is depends on the types of chillies used and can vary from very mild to extremely fiery. Preparation Time: 10 Mins Cooking Time: 15 Mins Total Time: 25 Mins Ingredients 4 Peppers - red - de-seed and roughly chopped 5 Chillies - red - green tops removed 5 cm Ginger - skinned and chopped 4 cloves Garlic - peeled 230 gms Tomatoes 340 gms Sugar 10 cl Vinegar - red wine Method Put peppers, chillies, ginger, garlic and tomatoes into a food processor and blitz until everything is chopped finely and pour into a wide heavy based saucepan. Stir in the sugar and the vinegar, turn up the heat and bring to a boil. Bring the temperature down to a simmer, allow to bubble away and reduce until it becomes thick and sticky – stirring occasionally to ensure it does not catch and burn. When the jam has reduced to the point where, if a spoon is run through it, it leaves a trail, pour it into sterilised jars and seal.
