This sauce is an integral sauce; that is, it made in the saucepan used for cooking a specific dish.  In this case the dish is fried fish – specifically fried sea bass.

Cooking Time: 5 Mins

Total Time: 10 Mins

Ingredients

For 4 servings…

60 gms            Butter       

1 cloves           Garlic  - chopped finely          

2                    Lemons  - zest and juice of      

1                    Orange  - juice of     

Method

To the saucepan in which the fish has been fried, add the butter, garlic, lemon zest and juice and orange juice.  Turn up the heat and let the mixture bubble until you have a glossy, syrupy sauce.  Pour into a jug.
