Cumberland sauce is a cold English sweet and sour sauce usually eaten with venison or meats.

Preparation Time: 10 Mins

Cooking Time: 25 Mins

Total Time: 1 Hr

Ingredients

1                    Orange     

1                    Lemon      

200 ml             Port         

2 tbs               Redcurrant jelly       

1 pinch            Cinnamon  - ground  

1 pinch            Cayenne    

Method

Remove the zest from the orange and lemon and cut into fine strips.  Cook a generous tablespoon of the zest very gently in the port for about 20 minutes.  Remove the zest and add the redcurrant jelly to the port, then a pinch of cinnamon and a pinch of cayenne.  Mix, bring to the boil and add the juice of the orange and lemon.  Mix in the cooked strips of zest.
