Gooseberry sauce is a lovely tangy sauce that is excellent with pork, goose and duck or with mackerel.

Preparation Time: 10 Mins

Cooking Time: 15 Mins

Total Time: 25 Mins

Ingredients

For 6 portions

60 gms            Butter       

1 tsp               Ginger  - root, grated

200 gms          Gooseberries           

1 squeeze         Lemon juice            

1 pinch            Salt          

1 tsp               Sugar       

½ glass           Wine  - dry white     

Method

Put the gooseberries in a saucepan with the ginger, sugar and wine.  Cover the pan and put it on a gentle heat and stew for 15 minutes or until the gooseberries are soft.  Push the fruit through a sieve.  Return it to the pan, sharpen it with lemon juice, add salt to taste and whisk in the butter.

 

 

Return
