Moscatel vinegar reduction

This reduction is useful for vinaigrettes and to drizzle over finished dishes.  It has a concentrated, almost sweet and sour flavour.  It will keep indefinitely.

                     Vinegar  - Moscatel   

Method

Pour Moscatel vinegar into a small saucepan, place over medium-high heat, bring to a boil, decrease the heat to maintain a simmer and cook until reduced by half.

Let it cool and store in a tightly covered jar at room temperature.
