This tangy red onion marmalade with mustard seed, garlic and chilli is delicious served with foie gras, Cheddar or cold meats.

The marmalade will keep 2 months.

Preparation Time: 15 Mins

Cooking Time: 1 Hr

Total Time: 1¼ Hrs

Ingredients

1 tbs               Olive oil    

500 gms          Onions  - red, peeled and finely sliced     

1 tbs               Mustard seeds  - black

2 cloves           Garlic  - sliced finely  

1                    Chilli  - red - chopped

60 gms            Sugar  - muscovado  

100 ml             Wine  - red 

100 ml             Vinegar  - balsamic   

10 sprigs          Thyme      

Method

Heat the oil in a large pan with the onions and mustard seeds.  Cook for 15 mins.  Add the garlic, chilli, sugar and 5 tbs of water.  Cover and cook for 15 minutes.  Add the wine, vinegar and thyme sprigs.

Bring to the boil and then simmer for 20-30 mins until the mixture is syrupy.  Remove the thyme.

Spoon into the hot, sterilised jars.
