Pesto originates from Genoa and is well known as a sauce for pasta, but it does have other uses. For example, with vegetables, eggs and poultry. Preparation Time: 15 Mins
Total Time: 15 Mins Ingredients 50 gms Basil leaves 35 gms Parmesan cheese 35 gms Pine nuts 2 cloves Garlic - chopped roughly 60 ml Olive oil Method Put the basil leaves, cheese, pine nuts and garlic into a food processor and blend to a paste. With the processor still running, trickle in the olive oil to give a creamy sauce. Put this into a sealable jar. It will keep for some time in a fridge but, before using, will need to be brought up to room temperature, up if it sets.
