Plum and ginger compote is a sweet and source fruit sauce and has many uses. It can be used as a sauce with breakfast (for example, in yoghurt), as a sauce on desserts (such as rice pudding or semolina) or as an accompaniment to a terrine, pork or strongly flavoured fish. Preparation Time: 15 Mins Cooking Time: 15 Mins Total Time: 30 Mins Ingredients 30 gms Butter 2 tsp Honey - runny 1 tbs Ginger - fresh - grated 1 tsp Ginger - ground 6 Plums - red, stoned and sliced To finish the sauce 1 knob Butter Method Over medium-high heat, melt the butter with the honey and gingers and stir until amalgamated. Then add the plums, increase heat and, while mixing, cook until the fruit is soft. Finally, stir is a knob of butter. Serve warm or cold. Variations The plums can be replaced with damsons. Adjust the cooking time to produce the consistency required – longer for an accompaniment sauce, less for fruit compôte.
