This sauce is more than just a sauce; in fact, it is the presentation of a vegetable, spinach. It is excellent with salmon. Preparation Time: 10 Mins Cooking Time: 10 Mins Total Time: 20 Mins Ingredients For 4 servings… Pepper - freshly ground, white Salt 4 steaks Salmon 30 gms Butter For the sauce ½ Onion - chopped finely 30 gms Butter 230 gms Spinach 1 leaf Sorrel - chopped 2 tbs Stock - chicken ½ Lemon - grated rind of Pepper - freshly ground, black ½ stp Nutmeg 140 ml Cream - double Method Cook onion in the butter gently until soft. Add the spinach, sorrel leaf, stock, lemon rind, pepper and nutmeg. Cook gently until liquid almost disappears. Purée in a processor and stir in the cream.
