Although this sauce originates from North Africa and is perfectly matched for accompanying couscous, It is also excellent with Greek- or Turkish-style meatballs.

Preparation Time: 10 Mins

Cooking Time: 30 Mins

Total Time: 70 Mins

Ingredients

For 4 servings…

2 tbs               Olive oil     

1                    Onion  - chopped finely          

1 clove             Garlic  - peeled and chopped    

1 tin                Tomatoes   

1 tsp               Sugar       

1 tsp               Cumin       

1 tsp               Coriander seeds       

                     Salt          

1                    Chilli  - dried, hot, small          

˝                   Lime         

2˝ cm             Ginger       

                     Pepper      

Method

Put ˝ tbs of the oil in a pan and fry the onion and garlic until they are soft.  Remove the garlic after cooking.

Add the tomatoes, sugar, cumin and coriander, salt and chilli.  Squeeze in the juice of the lime and then add the lime skin and ginger root to the sauce.

Simmer for 20 minutes.

Remove the lime skin, ginger and chilli after cooking.  Let the sauce cool.  Blend in a food processor - dribbling in the remainder of the olive oil.  Season.
