Yoghurt sauce is excellent with Middle-Eastern or Greek kababs and also with crudities and salads.  There are many variations of yoghurt sauce – alternative herbs can be used and mayonnaise can be added.  In this version, the garlic heightens the flavour of the food the sauce is accompanying; the mint provides a contrast.  It is an assertive sauce.

Ingredients

For 12 servings…

3 cloves           Garlic  - crushed      

1 tbs               Lemon juice            

1 tbs               Mint  - chopped       

2 tbs               Olive oil    

                      Pepper  - freshly ground, black 

                      Salt          

225 gms          Yoghurt     

Method

Beat together all the ingredients, except the mint.  When amalgamated, stir in the mint.
