Eggs with brown butter is a simple yet luxurious dish that elevates ordinary eggs with a deep, nutty richness.  As the butter melts and browns in the pan, it develops a toasty aroma and a complex flavour, adding a caramelized depth to the eggs.  It enhances their natural creaminess of the eggs with a touch of indulgence.

Ingredients

For 1 serving…

10 gms            Butter       

2                    Eggs         

                     Pepper      

                     Salt          

                     Vinegar  - white wine 

Method

Put the butter into a small omelette pan and heat it until it is almost black.  Gently break the eggs into the pan, season them and cook them until the whites have set.  Slide them on to a warmed plate.Deglaze the pan with a few drops of the vinegar  and pour this onto the eggs.  Serve at once.

Variations

As an alternative method, cook the eggs as in œufs sur le plat, make a brown butter and pour this over

the eggs.
