This is an interesting way of cooking a fried egg.

In spite of its name, the beurre noir is not cooked until it is black, but only until it is just turning a little darker brown than the shell of a hazel-nut.

Preparation Time: 1 Mins

Cooking Time: 10 Mins

Total Time: 11 Mins

Ingredients

For 2 servings…

2                    Eggs         

10 gms            Butter       

For the beurre noir

30 gms            Butter       

1 tbs               Vinegar  - white wine 

Method

To cook the eggs…

Fry the eggs gently in a little butter, keeping them covered.  Transfer them to a very hot serving dish.

To make the beurre noir…

Into the clean frying pan put the beurre noir butter.  Let it melt and, when it is foaming and just turning colour, pour it over the eggs.  Quickly pour the vinegar into the pan and let it boil.  Pour this over the eggs. Serve instantly.
