Omelettes make excellent light meals and mushroom omelettes are amongst the best.  The secret is that the mushrooms are prepared as a creamy sauce before being added to the omelette.

Preparation Time: 10 Mins

Cooking Time: 15 Mins

Total Time: 25 Mins

Ingredients

For 2 servings…

110 gms          Mushrooms  - chopped finely   

40 gms            Butter       

                     Pepper      

                     Salt          

1 pinch            Nutmeg     

1 pinch            Flour        

2 tbs               Cream       

6                    Eggs        

Method

The quantities will make two three-egg omelettes.

Make a cream sauce…

Gently cook the mushrooms in ⅔ of the butter in a small pan, season with salt, pepper and nutmeg and stir in a pinch of flour.  Then add the cream.

To cook the omelettes…

For each omelette, lightly beat three eggs with 1 half eggshell of water, pepper and salt.  In a hot omelette pan, greased with butter, cook the omelette and, when done as desired, spoon on half the mushroom mixture and fold over.  Serve at once.

A white or a light red.
