Scrambled eggs is one of many ways of cooking eggs (it is said that there are 685 French recipes for cooking eggs).  In its basic form, scrambled eggs is simply eggs beaten with pepper and salt and cooked slowly in melted butter.  To this basic recipe, many different additional ingredients can be added to make different dishes.

Some recipes suggest adding milk or water to the eggs.  This ruins the eggs and should only be done if there is food rationing.

Ingredients

For 1 serving…

2                    Eggs        

                     Pepper      

                     Salt          

30 gms            Butter       

To serve

1 slice             Toast or fried bread  

Method

Beat the eggs with the salt and pepper.

Heat the butter in a saucepan until just melted.  Pour in the beaten egg and stir over a gentle heat until just set.  It should be solid but not dried.

Serve at once on toast or fried bread.

Wine recommendations

Wine does not go well with eggs but a white would be better than red.
